Persian Fetta & Roasted Vegetable Salad
Ingredients:

• 1 pack Yarra Valley Dairy Persian Fetta (275g)
• 2 cups rocket leaves
• 1 cup chickpeas (cooked or canned)
• 3-4 assorted roasted root vegetables (carrots, sweet potatoes, parsnips)
• Olive oil, salt, and pepper to taste

Instructions:

1. Preheat your oven to 200°C (400°F).
2. Toss the root vegetables in olive oil, salt, and pepper, and roast for 25-30 minutes or until golden brown.
